Ingredients

  • 400g pasta (such as spaghetti or penne)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 800g canned crushed tomatoes
  • 1 teaspoon sugar
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • A handful of fresh basil leaves, chopped (optional, for garnish)
  • Grated Parmesan cheese, to serve

Instructions

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

Prepare the Tomato Sauce:

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.

Simmer the Sauce:

  • Pour in the crushed tomatoes and stir well.
  • Add the sugar, salt, pepper, oregano, and dried basil. Stir to combine.
  • Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens.

Combine Pasta and Sauce:

  • Add the cooked pasta to the skillet with the tomato sauce. Toss well to coat the pasta evenly.
  • If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

Serve:

  • Transfer the pasta to serving plates.
  • Garnish with fresh basil leaves and grated Parmesan cheese.
  • Serve hot and enjoy!
